Has anyone ever notice that when native vines climb a bush or tree. They do it anti- clock ways ?

I hadn't noticed, darinnightowl but I'll have a look at my Native Lilac Hardenbergia violacea tomorrow. I wonder if they go in the same direction as the water down my bath plug hole.
I was on a bushwalk last weekend when someone pointed this out to me.
Apparently it's about chasing the sun, which tracks east to west across the northern face of the tree in the southern hemisphere.
In the northern hemisphere apparently they go the other way.

No, it isn't, and no they don't! This is a common misperception / myth. Spiralling plants go the same direction whichever hemisphere they are in!

Your statement actually makes much more sense if you consider it part of the physiology of the plant in question.
