I have a question, are these birds (for eg) looking at each other, or off to the sides, or does there vision encompass both directions.

It would depend on the brd and the positioning of their eyes- being on the sides I expect they would have a much wider field of vision than us. You can see both eyes in a front-on shot so they should be able to see directly in front and a significant way around behind them but not all the way
